Breakfast  Frittia: A healthy way to start a hiking day:

A large handful of fresh spinach
a few slices of very thinly sliced red onion
a handful of sliced mushrooms
a few thin slices of red pepper
a few slices of tomatoes
3 eggs



Using a small frying pan ( 8 inch), add two Tablespoons of either Olive Oil or Avocado Oil to the skillet.  Add the first four ingredients and softly saute. While this is going on, scramble the eggs in a bowl and add a sprinkle of garlic powder, Cavender's greek seasoning, and Tony's Cajun seasoning...just a sprinkle. Scramble again. When the spinach begins to wilt, add the seasoned egg mixture and top with sliced tomatoes, lower the heat, cover the pan.  Check frequently.  You want the heat fairly low to cook eggs but not brown them.  It takes about ten minutes or so.


You can add, meat, different seasonings...it is basically an omelet without any hassles. 




Simple Side - Broccoli ,Carrot ,  Cranberry Salad

one small head of broccoli
1 carrot
1/2 of a red onion
a handful of dried cranberries
a touch of real sugar
about a half cup of mayonnaise
about a third cup of white vinegar or apple cider vinegar

Break or cut off the top florets of the broccoli and put in a large bowl, grate the carrot, slice the red onion very thin add to the bowl along with the dried cranberries.  Now this is the only tricky part,  in a separate bowl, mix the mayo and vinegar and sugar.   Toss the dressing mixture into bowl with veggies.  You can add a touch of ground ginger if you like.  Let the salad sit for at least two hours.  Give it a taste test...you may prefer more mayo or more vinegar or even more sugar ( we try to avoid too much sugar).. You can also a squeeze of lemon juice to brighten the taste buds up.
